Aquest és un vi en el què el treball de camp és molt important. Per a poder elaborar-lo, juguen amb les diferents maduracions de la varietat. Realitzen dues collites dels mateixos ceps. La primera collita, al voltant dels 11.50º, par tal d’aconseguir l’acidesa pròpia i natural del raïm i les notes més fresques i cítriques de la varietat. Al retirar part de la càrrega del cep, el raïm que queda, madura molt millor. Posteriorment, passen a recollir la segona part del raïm amb un grau alcohòlic provable d’uns 14º. A continuació, ajuntem les dues parts.
