The sobrasada of Mallorca is related to the black pig, which has been native to the island since time immemorial. It has ears that fall on the snout. Their diet, apart from acorns, is also made from figs and other fruits.
Therefore, it is neither the same species nor does it have the same diet as the acorn-fed Iberian pig.
Furthermore, being an island where humidity is very present, hams or shoulders are not made. Everything goes to the sobrasada. Therefore, unlike Iberian pork sobrasadas, within the Mallorquina there are thighs and shoulders.
Sobrasadas from Biel Torren are the only producer of Mallorcan pork that maintains the animal from an ecological perspective.
