They select the best drilling of old vineyards. They take the grapes in boxes of 20 Kg to guarantee that it arrives whole before its transformation. The vintage is cooled, and the grapes are pressed directly, obtaining a must that marks the vintage with both color and aromas. The fermentation begins with the autochthonous yeasts of the grape.
They do not add yeasts, enzymes or any other additive during winemaking or in the aging process. They do not filter or clarify their wines. The bottles may have some natural sediment and / or Co2. You have to aerate the wine once the bottle is opened. Each bottle is unique and different from the others.
