Fermentation with naturally-occurring yeasts for 30 days.Separate vinification of the two varieties in stainless steel vats with constant temperature control (16˚). Ageing on lees. Conservation in stainless steel and coupage during bottling. No sulphites added in conservation. No clarifying, filtering or corrections of the wine at any point in the process.
