In Masía Can Ramon the wine industry began in the fourteenth century. This activity was paralyzed by the phylloxera and little by little, the lands stopped being cultivated and f were occupied by the vegetation of a Mediterranean forest.

It is not until 2001 that the winery Can Ramon Viticultors del Montgròs del Penedès, located in the municipality of Sant Pere de Ribes, in the middle of the Natural Park of the Macizo del Garraf facing the Mediterranean Sea, takes up the winemaking activity at the hands of the brothers Manuel and Joan Aviñó. This project is conceived with the idea of ​​producing Can Ramon wines and champagnes as had been done before, following the lunar calendar that determines when they should start the different viticultural tasks and using agricultural concepts that respect the environment, without the use of herbicides and pesticides, in addition to using biodynamic parameters.

In this region with slopes of up to 30% slope, the vines have occupied on the slopes of Montgròs (358 m) the least fertile terraces of dry stone wall, on soils of limestone combined with clay, shallow and with an important mineral component. This combination limits the production of a vineyard that provides a fruit from which wines of a very unique, mineral and high quality character are produced. The white wines of Can Ramon achieve a high aging potential while maintaining the mineral character.

The set of cultivated plots of Clos Lentiscus do not exceed 22 hectares, and individually do not reach the extension of one hectare. The autochthonous varieties of the Garraf Massif, Xarel·lo, Malvasía de Sitges and Sumoll, occupy 95% of the entire crop and the remaining 5% consists of the Cariñena and Tempranillo varieties.

In Can Ramon all Clos Lentiscus cavas are monovarietal elaborations of the varieties Cariñena for rosé, Malvasía de Sitges for Blanc de Blancs and Sumoll for Blanc de Negre. All of them are made from base wines obtained under the canons of biodynamics to enjoy the maximum expression of the Clos Lentiscus sparkling wine of Can Ramon Viticultors.
